Peanut Butter Chocolate Chunk Cookies

The classic peanut butter cookie could only be improved by adding chocolate! There’s no better Friday night activity than whipping up a batch of these cookies with a tall glass of milk while binge watching Schitts Creek on Netflix…which is what I may or may not doing as I write this… Is there seriously anything better than chocolate & peanut butter together?

I make these cookies with coconut sugar; a natural sweetener that gives baked goods a caramelized depth of flavor. Bob’s Red Mill is my favorite brand. You can definitely use regular sugar in this recipe instead, substituting 1/2 cup white and 1/2 cup brown sugar in place of the coconut sugar. For a more traditional peanut butter cookie, you can leave out the chocolate chips – you do you! Any way you shake it, it will be hard not to eat the whole batch in one sitting!

  1. So delicious I already ate 2 and they just came out of the oven! I substituted 1/2 white sugar and 1/2 brown sugar for the coconut sugar and used mini chips instead of chunks because that’s all I had in the pantry. Also increased my bake time by 2 minutes because that’s how my oven rolls. A large cookie scoop worked perfectly!
