Everyone’s got their favorite chili recipe and this will soon be yours! It’s so easy to throw together and truly a crowd favorite every time.
This chili is hands down my go-to weeknight dinner. It can be made in the slow cooker, instant pot, or even on the stovetop and it comes out amazing every single time. The best part is that almost all the ingredients are probably sitting in your pantry right now! I always make sure to stock up on cans of beans, diced tomatoes, sauce, and corn so I have them on hand for nights when I want to whip up a batch.
I like my chili to be super textured and chunky, and more heavy on the veggies than beans. However, the ingredients can be modified for whatever you have on hand. Don’t have a bell pepper? Leave it out! Have red beans instead of white? Switch it up! I’ve made it with ground chicken, ground turkey, added extra veggies for vegetarian – you literally can’t go wrong.
If you’re feeling fancy, garnish the chili with sour cream, guac, fresh cilantro, lime jalapenos, or cheese! Most of the time I just eat it plain though because #lazy and its so good on it’s own. I hope this chili becomes a staple in your kitchen like it has mine!
My Famous Easy Chili
Ingredients
- 1 Tbsp Olive oil or Avocado Oil
- 1 Medium Yellow onion, diced
- 1 Bell pepper, diced
- 2 Large cloves Garlic, minced
- 1 Lb Lean Ground Beef
- 24 oz Can Diced Tomatoes
- 15 oz Can Tomato Sauce
- 15 oz Can White Northern Beans, drained and rinsed
- 11 oz Can corn, drained
- 2 Tbsp or 1 Packet of your favorite Taco Seasoning
Instructions
- Sauté diced onions and peppers in 1 tbsp oil over medium heat until just soft, about 3 minutes. Add in minced garlic and stir until fragrant, 1 minute.
- Add ground beef to pan with peppers, onions, and garlic. Break up meat and cook until browned and just cooked through.
- Once beef is cooked through, add to slow cooker and stir in all remaining ingredients.
- Cook on low for 5 hours or high for 3 hours.
- Garnish as desired with sour cream, pickled jalapenos, or cilantro.
Notes
Instant Pot Instructions:
Using the “sauté” function on your instant pot (medium or “normal” heat), follow steps 1-3 above.
Set Instant Pot to manual high pressure for 5 minutes. Allow to naturally release for 5 mins then carefully open the steam vent to release the remaining pressure.
Garnish as desired.
