Pretty much every food blogger on the planet has their version of “Egg Roll in a Bowl” and I absolutely could not resist posting my own. It has all the flavors of egg roll filling, with pork and cabbage in a savory sauce. It may just be the easiest recipe ever, it’s perfect for meal prep, and can be served over rice, cauliflower rice, or all by itself.

This recipe is made in one pan and takes all of maybe 15 minutes start to finish. I started making it when I was on a round of Whole30 and have been continuing to make it ever since. The only substitution needed for Whole30/Paleo is to swap the soy sauce for Coconut Aminos. It’s a soy free and gluten free alternative made from the sap of the coconut palm and tastes almost identical to soy sauce. For Whole30 I serve over cauliflower rice. Who needs takeout?

While the pork is browning in the pan, chop up the onion, mince the garlic, and grate the ginger. Once the pork is cooked through and slightly crispy, add the onion & garlic and cook a minute or two until soft. Add the cabbage and carrots and stir to combine with the pork, cooking down until slightly softened but still a little crunchy. Finally, stir in the remaining ingredients to create the sauce and give a final stir. Garnish with green onions and serve! So super easy and I’m not kidding when I say it’s done in 15 minutes. Weeknight win! (or any night, really)

I use pre-shredded cabbage in this recipe because it cuts down prep time BUT I do recommend using fresh ginger and garlic. It takes a minute or two to mince/grate but the flavor is so worth it. All about balance! If you’re in a pinch you can use garlic powder and ground ginger (you’ll need 1 tsp of each) and it will still come out great.
