This throw-together recipe could not be easier for a quick weeknight meal. I serve these honey mustard chicken thighs with a side of roasted veg and potatoes for the easiest dinner imaginable. This also makes great leftovers for the week, as chicken thighs stay nice and juicy when reheated.
Chicken thighs > chicken breasts. Don’t @ me.
But seriously, they are so much more flavorful & juicy than chicken breasts, and I find they are more forgiving in the way that they are harder to overcook. They soak up whatever flavors you cook them in – like this super simple honey mustard sauce.
I started making this recipe in college because I could usually stock up on chicken thighs for cheaper than chicken breasts and just keep them in the freezer, and I always had the other ingredients on hand in my pantry. It’s a ridiculously good, almost no effort recipe (a.k.a. my kind of deal). Just mix the sauce ingredients, pour over the chicken, and bake.
Honey Mustard Chicken Thighs
Ingredients
- 2 lbs boneless, skinless chicken thighs
- 2 Tbsp olive oil
- 2 Tbsp honey
- 2 Tbsp dijon mustard
- 1 Tbsp fresh thyme leaves (or 2 Tsp dried). Additional for garnish.
- salt + pepper to taste
Instructions
- Preheat oven to 375 degrees.
- Season chicken thighs with salt & pepper on both sides and place in a 9×13 baking dish
- Combine all other ingredients in a small bowl, pour over chicken. Top with more fresh thyme.
- Bake for about 40 mins or until chicken is cooked through and slightly browned on top.
Notes
The rendered juices from the chicken will combine with the honey mustard to create some delicious drippings. If desired, you could transfer these drippings to a small saucepan and simmer on the stove for about 10 minutes until thickened.
