Anything that has “loaded” in front of the name is usually super unhealthy yet super delicious. Who doesn’t want to shove their face into a plate of loaded fries?? I am also a huge sucker for Buffalo Chicken, in any form. I wanted to make a Paleo & Whole30 version that combines the two crazy indulgent foods into something that could pass as a balanced meal.
Step 1: The Best Homemade Sweet Potato Fries
Sweet potato fries are super easy to make at home and come out amazing in the air fryer. If you don’t have an air fryer, what are you even doing with your life? Just kidding (kinda). You can totally use the oven for this and it will be just as good, it will just take a little longer. But if you are interested in changing your life in the kitchen, I highly recommend investing in an air fryer. This is the one I have and I absolutely love it. I use it to make my Coconut Shrimp (also Paleo) among many other things, including reheating leftover anything.
To get the crispiest sweet potato fries, the trick is to coat the sliced potatoes in your avocado oil and spices, and then toss them in a couple tablespoons of arrowroot powder (you can use cornstarch instead if you aren’t following Paleo or Whole30). The arrowroot/cornstarch creates a crust on the outside of the fries while the inside stays nice and tender. Place them in your Air fryer in a single layer with some space between them so they don’t steam (check out the recipe notes for oven instructions). It’s worth doing this in a couple batches because they cook pretty quickly and will come out so much more crispy if you don’t over crowd them.
Step 2: Easy Buffalo Chicken
For this recipe I use a really simple assembly of cooked shredded chicken and buffalo sauce. Cook your chicken however you’d like, you can roast it, poach it, or even just use a rotisserie chicken which is what I usually do! Any way you do it, just shred your chicken in a bowl and combine it with your favorite Buffalo sauce. Primal Kitchen’s new Buffalo sauce is my favorite – they add cashew butter to make it suuuuper creamy but still dairy free/Paleo. The New Primal also has a great one, and you could even just use Frank’s Red hot (or any other hot sauce) combined with equal parts Ghee or butter to make your own delicious buffalo sauce.
Step 3: Toppings
Here is where the real magic happens and you could go crazy with your favorite toppings. I topped these fries with tomatoes, chopped celery, sliced green onions, and a homemade avocado mayo drizzle (the Avo Mayo was my Dad’s idea and I’m living for it). All the toppings are healthy, whole food ingredient based and loaded with flavor. What could be better?

Loaded Buffalo Chicken Sweet Potato Fries
Ingredients
- 4 Medium Sweet Potatoes, Peeled
- 2 Tbsp Avocado Oil
- 1 Tsp Salt
- 1 Tsp Black Pepper
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Onion Powder
- 1/2 Tsp Paprika
- 2 Tbsp Arrowroot Powder (or Cornstarch if not Whole30/Paleo)
- 1 Lb Cooked Shredded Chicken
- 3/4 Cup Buffalo Sauce of Choice (See notes)
- 1/3 Cup Paleo Mayo
- 1/2 Avocado
- Juice of 1 Lime
- 1 Clove of Garlic
- Salt & Pepper to taste
- Toppings:
- Tomatoes, Finely Diced
- Celery, Finely Diced
- Green Onions, Sliced
- Extra Buffalo Sauce
Instructions
- Cut Sweet potatoes lengthwise into about 1/4″ “planks” and then slice each plank into even strips to create your fries.
- Add fries to a large bowl and drizzle with avocado oil. Sprinkle with salt, pepper, garlic and onion powder and paprika and toss to evenly coat. Once coated, sprinkle arrowroot or cornstarch and toss again so that the fries are evenly coated and starch is combined with oil/spices.
- Place fries in the air fryer basket in a single layer and air fry for about 13 minutes, shaking the basket halfway through so fries get evenly crisped. You may have to fry in 2 batches as not to overcrowd the fries.
- While fries are cooking, combine your cooked chicken and buffalo sauce in a medium bowl, set aside.
- In a blender, combine mayo, avocado, lime juice, garlic, salt & pepper. Blend until smooth, adding water if necessary to create a drizzling consistency.
- Once fries are out of the air fryer, place on a plate or serving dish and layer on the buffalo chicken, avocado mayo drizzle, and toppings.
Notes
- To make these in the oven, preheat oven to 450 degrees and place seasoned fries spread out in a single layer on a baking sheet (may have to use 2 baking sheets to ensure fries are not over crowded). Bake for 10-15 minutes on each side or until fries are crispy on the outside and tender on the inside.
- To make your own buffalo sauce, combine about equal parts hot sauce (any brand) and ghee or butter in a small sauce pan. Simmer over medium heat for about 5 minutes or until sauce starts to thicken. Set aside until ready to use.
