Anyone else feel super fancy when they make a pasta dish that isn’t just noodles with a jar of sauce? Ok maybe that’s just me. Nothing against a good ol’ jar of Ragu, but if you’re looking for something with a little more…. pizzazz, this super simple, Mediterranean inspired dish will do the trick.
Lately I’ve been super into Banza pasta made from chickpeas as a lower-carb gluten free alternative to traditional pasta, but any kind of pasta will work perfectly, even zucchini noodles. Just make sure you squeeze ’em to get all the excess water out, as I outline in this post.
This quick and easy 5-ingredient dinner is perfect for busy weeknights. The sauce can be made while the spaghetti is boiling away, and in the time it takes to cook the pasta you have a delicious vegetarian meal made with only 5 ingredients (not including olive oil and salt/pepper).
Spaghetti with Olives and Artichoke Hearts
Ingredients
- 8oz Spagetti
- 1 Tbsp Olive oil
- 2 Cloves Garlic
- 15 oz Can Artichoke Hearts, drained
- 15 oz Can Diced Tomatoes
- Small handful Kalamata Olives
- Salt & Pepper to taste
Instructions
- Cook pasta according to package directions. Strain & set aside.
- While pasta is cooking, sautee garlic in olive oil over medium heat until just fragrant, about 30 seconds to 1 minute.
- Add diced tomatoes and artichoke hearts to pan and simmer for 2-3 minutes. Season sauce with salt & pepper to taste.
- Add cooked pasta and olives to the sauce and stir until combined. Cook another minute or two before serving. Garnish with parmesan cheese and fresh parsley if desired.
